These cookies might not look pretty, but they are certainly delicious and dairy free! It's very hard to just stop at one!!

You Will Need:
1 Ripe Banana
1/3 Cup Canola Oil
2/3 Cup Brown
Sugar
1 Teaspoon Vanilla
3/4 Cup plus 2 Tablespoons Plain Flour
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1/4 Teaspoon Ground Cinnamon
2 Cups Oats
1/2 Cup Walnuts
1/2 Cup Dairy Free Chocolate Chips
Method:
Preheat oven to 180 degree celsius and line a baking tray with baking paper.
In a mixing bowl, mash banana. Add oil, sugar, vanilla and mix together well.
Add the flour, baking soda, salt and cinnamon and mix until the dry ingredients are just moistened.
Add the oats, walnuts and chocolate chips and mix well.
Clean your hands and roll the dough into balls approximately the size of a golf ball.
Place the balls onto the baking tray and bake for 10 - 12 minutes.
Let the cookies cool on the tray, then transfer to a cooling rack.
Enjoy!

You could make these cookies for breakfast or a healthy morning treat, just omit the chocolate chips. You could always make them gluten free by substituting the plain flour and oats for a gluten free equivalents.
